Try keep track of their blinking rates, increased blink rate usually means bluff.
This is an old police interrogation technique. Increased blink rate implies deception.

Get used to watching how all your opponents place their bet, watch their hand movement. Was it natural? Was it fluid? Most of the time, they will not be conscious of how they are placing their bets. When they have the nuts some will consciously try to be smoother when they place their bets. As soon as the opponent breaks from his routine, be suspect.
When a player places a bet and his or her hands are suddenly shaking, they could have an exceptionally good hand, but this is usually only true of novice players.
